This is a great party treat and was the biggest hit at our Beauty and the Beast feast themed party!

Ingredients

  • Begonia blossoms, or small rose blossoms
  • 3 drops pf red vegetable-based dye
  • 1/4 cup organic white granulated sugar (organic is vegan)
  • Ginger beer
  • Rose syrup
  • 3 Tbsp Lemon juice

Instructions

NOTE: The ice cubes will take time to solidify, so make sure you make them the day before or so! There are two freezing periods involved, read the whole recipe before beginning to do it for your party!

Day before:

Pour filtered water into an ice tray, about a third full.

Rinse the blossoms. If using Begonia flowers: Remove the outer two or three petals. Place the blossoms in the water, facing up.

Freeze the ice trays until frozen; usually it takes a few hours.

Gently take out the ice trays and carefully add more water to them without disturbing the ice. If the ice stays locked in the ice tray, it will allow the water to cover the blossoms. If the ice pops up, it will float above any additional water you add. It’s still usable if that happens, just not as pretty!

Freeze again for a few more hours.

Day of:

Pour the lemon juice into one bowl and set aside.

Pour the granulated sugar into a separate bowl. Put the red drops in the sugar, and use a whisk to mix it up until the red dye turns the sugar pink. Set aside.

Dip your finger in the lemon juice and run it around the rim of the cup. Then put the rim of the cup into the colored sugar.

For each drink, pour about a tablespoon of rose syrup into the bottom of the cup. Place 2-3 blossom ice cubes in the cup. Pour to the top with gingerbeer and serve!
